The easiest meal prep option in 60 seconds. These packets are great paired with cauliflower rice (low carbohydrate options) or basmati rice for a simple and easy meal prep. Typically the packet makes 2 meals. Usually found at your local grocery. Simple ingredients, low in sodium (for a convenience meal), and extremely tasty!

My favorite breakfast recipe for my one year old:


Oatmeal Pancakes

1 Instant Packet of Plain Oatmeal

1 Egg

1 Small Mashed Banana

Dash of Cinnamon or Pumpkin Spice

You can also add in 1 spoonful of plain greek Fage Yogurt, Nut Butter, Flaxseed, Chia Seeds, or Canned Pumpkin


Mix all together and place on greased skillet into 2 large or 3 small pancakes... cook until slightly brown on each side. They are a little "mushy" but super tasty and super simple!
